This icy cold drink is sunshine in a glass. I tried it for the first time at Real Fruit Bubble Tea, and instantly became obsessed. Addicted might be a more appropriate term, really. It’s just so freaking good. This quickly became an issue for me, however, as each drink costs around eleven dollars…and with the depth of my addiction, well, my bank account was giving me the side eye. So I figured out how to make it myself at home! My trips are far more reasonable in number now. I asked, and as it turns out the ingredients couldn’t be any simpler. It’s just a blend of simple syrup, ice, and beautifully ripe passion fruits. It’s so quick and easy to make, and yet the flavour packs a huge punch. I typically make it as is, but if you feel like spending the extra time one day, it’s really fun to make the tapioca pearls at home to pair with the slush. Another delicious addition that I sometimes add is ripe mango cubes—I prefer the Ataulfo variety. Be sure to cut them small enough to pass through the bubble tea straw. Do make it as is for your first time, but if you want to make variations on the slush itself, adding a few chunks of mango or pineapple (or both!) is a fun tropical alternative. You would blend this in on high after blending the ice and syrup together, but before adding in the passion fruits. I hope that you enjoy this drink as much as I do. I love how thick it is, with a fun crunch from the passion fruit seeds. I think that it would make for a wonderful blended mocktail, and is otherwise a brilliant summer drink, perfect for if you’re having friends over, or if you’ve had a long or difficult day and need a fail-proof pick-me-up!


*Edit: years after I posted this recipe, Real Fruit Bubble Tea changed their recipe, and they now use a syrup instead of the fresh fruit, which is what they used to do. This is the copycat recipe for their old (and far superior) version!

Notes


  • Make sure that the passion fruits are very ripe. When picking them at the grocery store, look for ones with a wrinkled exterior, and a slight softness when squeezed. Or, wait for these traits to develop if only unripe ones are available. The inside should be a vibrant yellow. If the flesh around the seeds is grey, or a pale yellow, your passion fruit is not ripe enough. It’s important that the passion fruits be ripe both for their flavour (most importantly), and for their sweetness. The added sugar in this recipe is measured to compliment ripe passion fruits.

  • I recommend using the measurement in grams for the ice. If you’re using the measurement in cups, be sure to use crushed ice in order to get as consistent a measurement as possible. Regular cubes will have too much space between each to provide an accurate measurement. Crushed ice will also blend more easily.

  • This drink it quite sweet! If you prefer your drinks less sweet, feel free to use 1-2 tsp less sugar. Do still use the same quantity of water.

Ingredients

  • 1/4 cup sugar *see notes

  • 1/4 cup water

  • 135 g (or 1 cup) crushed ice

  • 4 ripe passion fruits



Instructions

  1. Make a simple syrup. To do this, place sugar and water in a small saucepan. Set heat to medium-high, and cook, stirring occasionally, until the sugar has dissolved. Pour syrup into a small glass, and allow it to cool completely before using. You can place it in the fridge or freezer to speed up the cooling process.

  2. Pour the simple syrup and ice into a high-powered blender. Blend on high until ice is fully blended and you have a thick slush.

  3. Scoop the flesh of the passion fruits into the blender, including the seeds. Blend on low, until the passion fruits are fully integrated into the slush, and no clear slush remains. Be sure to do this on low, and stop as soon as the mixture is combined, as you don’t want to break down the seeds. They should remain whole.

  4. Pour into a glass and drink immediately. I suggest using a bubble tea straw. If you aren’t quite ready to drink it for some reason, you can keep it in the freezer for a few minutes to prevent the blended ice from melting.

  5. Enjoy!
